Cherry Nut Cake

Ingredients

  • 8oz pkg cream cheese
  • 1 cup margarine
  • 1 1/2 cups sugar
  • 1 1/2 tsp vanilla
  • 4 eggs
  • 2 1/4 cups flour
  • 1 1/2 tsp baking powder
  • 3/4 cup chopped maraschino cherries, weel-drained
  • 1/2 cup finely chopped pecans
  • 1 1/2 cups icing sugar
  • 2 tbsp milk

    Method

    1. Combine first 4 ingredients and mix at medium speed until well blended.
    2. Add eggs, one at a time, mixing well after each addition.
    3. Sift together 2 cups flour and baking powder.
    4. Gradually add cream cheese mixture; mix well.
    5. Toss remaining flour with cherries and pecans; fold into batter.
    6. Grease 10-inch tube pan. Sprinkle with finally chopped pecans. Pour batter into pan.
    7. Bake at 325° for 1 hour and 10 minutes.
    8. Cool.
    9. Mix icing sugar and milk together. Glaze cake.
