Cherry Nut Cake
Ingredients
8oz pkg cream cheese
1 cup margarine
1 1/2 cups sugar
1 1/2 tsp vanilla
4 eggs
2 1/4 cups flour
1 1/2 tsp baking powder
3/4 cup chopped maraschino cherries, weel-drained
1/2 cup finely chopped pecans
1 1/2 cups icing sugar
2 tbsp milk
Method
- Combine first 4 ingredients and mix at medium speed until well blended.
- Add eggs, one at a time, mixing well after each addition.
- Sift together 2 cups flour and baking powder.
- Gradually add cream cheese mixture; mix well.
- Toss remaining flour with cherries and pecans; fold into batter.
- Grease 10-inch tube pan. Sprinkle with finally chopped pecans. Pour batter into pan.
- Bake at 325° for 1 hour and 10 minutes.
- Cool.
- Mix icing sugar and milk together. Glaze cake.
