Cranberry Loaf

Ingredients

  • 1 cup flour
  • 1 cup graham cracker crumbs
  • 1/2 cup brown sugar, packed
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1 cup cranberries, chopped
  • 1 cup raisins
  • 1/2 cup walnuts, chopped
  • 1 tbsp grated orange rind
  • 1 egg, beaten
  • 1 cup orange juice
  • 1/3 cup cooking oil

    Method

    1. Mix first 5 ingredients together in a bowl.
    2. Stir in cranberries, raisins, nuts and orange rind.
    3. Add beaten egg, orange juice and cooking oil. Stir until blended.
    4. Scrape into greased 9x5x3-inch loaf pan.
    5. Bake in 350° for 1 hour or until toothpick comes out clean.
    6. Let stand 10 minutes. Remove from pan to cool. Wrap.
