Cranberry Loaf
Ingredients
1 cup flour
1 cup graham cracker crumbs
1/2 cup brown sugar, packed
2 tsp baking powder
1/2 tsp salt
1 cup cranberries, chopped
1 cup raisins
1/2 cup walnuts, chopped
1 tbsp grated orange rind
1 egg, beaten
1 cup orange juice
1/3 cup cooking oil
Method
- Mix first 5 ingredients together in a bowl.
- Stir in cranberries, raisins, nuts and orange rind.
- Add beaten egg, orange juice and cooking oil. Stir until blended.
- Scrape into greased 9x5x3-inch loaf pan.
- Bake in 350° for 1 hour or until toothpick comes out clean.
- Let stand 10 minutes. Remove from pan to cool. Wrap.
